When you eat food, you body digests the macronutrients: carbohydrates, proteins, and fats – its fuel. Anything it can’t digest, like alcohol, fibre or toxins, either passes right on through… or, if it gets into your bloodstream, it gets filtered by your liver – a beast of an organ if there ever was one.
If you eat more fuel than your body needs, your body is forced to store the extra. During the hunter-gatherer days of “feast or famine”, this was very helpful. And people became very efficient at storing fuel, able to survive a rigorous environment.
But here’s a widely ignored fact that directly impacts everyone… Every type of carbohydrate you eat – whether bread, pasta, cereal, potatoes, rice, fruit, dessert, candy, and sodas – converts to simple sugars known as glucose, either directly in your gut, or after a short visit to your liver.
Glucose is a fuel, but it’s actually quite toxic in excess, unless it’s being burned inside your cells. So your body has a unique way to export it from your bloodstream and quickly get it into your cells.
Simply put, your liver and muscles store any excess glucose as glycogen. When specialized beta cells in your pancreas sense extra glucose in your bloodstream after a meal, they secrete insulin – a hormone that allows glucose (plus fats and amino acids) to move inside your muscle and liver cells.
But there’s a giant caveat…
Once those cells are full – as they usually are unless you’re active – the rest of the glucose is converted to fat. Saturated fat…
It’s perfectly logical that in a world where food was often scarce or non-existent for long periods of time, your body became incredibly efficient.
Ten thousand years ago, our ancestors had very little access to sugar – or any carb. There was a little fruit here and there, a few berries, roots and shoots, but most of their carbohydrate fuel was locked inside heavy fibre. In fact, some scientists believe our ancestors consumed, on average, only about 80 grams of carbohydrate a day… compared to the 350-600 grams in today’s typical American diet.
The rest of their diet consisted of fat and protein, which had little effect on insulin.
Today when you eat too many carbs, your pancreas pumps out insulin exactly as your DNA blueprint tells it to (go, pancreas!)… but if the liver and muscle cells are already stuffed with glycogen, those cells become resistant to the call of the insulin. The insulin “receptor sites” on the surface of your cells start to lose efficiency, called “down regulation”.
Now the glucose can’t get into your muscle or liver cells, so it free floats around your bloodstream. Your pancreas gets an alarm that says, “too much toxic glucose” – so it pumps even more insulin to try to deal with the glucose… which makes the insulin receptors even more resistant. And excess insulin is also toxic. Not good.
Eventually the insulin ushers the glucose into your fat cells, where it’s stored as fat. This is a crucial point. It’s not fat that gets stored in your fat cells – it’s sugar.
As time goes on, high carb eating and less exercise boosts your insulin insensitivity. And this is something no drug can fix…
Your blood glucose levels stay high for longer, because glucose can’t get into your muscle cells.
Your sugar is stored as fat. Your muscles get less glycogen because they’re resistant, and insulin prevents fat-burning… so now you can’t even burn your fat. You get fatter (and more frustrated) because even those fat cells become resistant.
Your pancreas works harder and longer – “If a little isn’t working, maybe more will be better”… Wrong. You do NOT want insulin building up in your system.
Insulin resistance stops not only sugar from getting into your muscle cells – it also stops amino acids from entering. Now you can’t build muscle either. Making matters worse, your body thinks there’s insufficient sugar in your cells, so they send a signal to your muscle tissue to make more sugar!
Your energy level plummets, making you crave more carbs and less willing to exercise.
When your liver is insulin resistant, it stops converting T4 to T3, further slowing your metabolism.
